Rum is the spirit most naturally suited to batch preparation. Its flavour is robust enough to hold in a bottle for days without losing character, and the cocktails it anchors are built for warm evenings and easy serving.
Batched Dark and Stormy 300ml dark rum, 50ml fresh lime juice, 20ml homemade ginger syrup (ginger, sugar, water, reduced). Bottle and refrigerate. Serve over ice and top with ginger beer at the last moment.
Batched Rum Punch 200ml white rum, 100ml dark rum, 150ml pineapple juice, 100ml fresh orange juice, 50ml grenadine, juice of two limes. Mix, taste, adjust. Bottle and refrigerate. Shake before serving over crushed ice with a slice of orange.
Spiced Rum Infusion 700ml golden rum, one cinnamon stick, three cloves, one vanilla pod split lengthways, the zest of one orange. Seal and leave for five to seven days. Strain and rebottle. Ready to drink straight, over ice or as the base of any rum cocktail.
