National Tequila Day is on 24 July and if there is one spirit that deserves to be celebrated with something more than a quick shot, it is tequila. Versatile, complex, capable of transforming completely with a good infusion or of becoming the most iconic cocktail in the world in a matter of minutes. What you will find in this guide is not just a recipe: it is a different way of approaching a spirit that has far more to offer than most people realise.

Infused Tequila: Jalapeño, Lime and Honey

Jalapeño infused tequila is perhaps the most popular infusion in the world of craft cocktails. Spicy enough to make an impression, with a citrus note that makes it incredibly versatile. This version adds honey and lime to soften the heat and add depth.

 

Into a clean, sterilised 700ml bottle place 2 fresh jalapeños sliced into rounds (seeds in for more heat, seeds out for something more delicate), the zest of 2 unwaxed limes and a tablespoon of clear honey. Pour in 700ml of good quality tequila blanco, seal and shake. Leave to infuse at room temperature for 24 to 48 hours, tasting every 12 hours: jalapeño works fast and can become too intense if left too long. Strain, rebottle and store in the fridge.

 

It works perfectly in a spicy Margarita, with tonic water and plenty of ice, or simply served cold in a glass with a salted rim.

Homemade Agave Syrup

Most homemade Margaritas fall short for one reason: the sweetener. Granulated sugar does not dissolve well in cold liquids, plain simple syrup is too neutral and lacks the roundness that tequila needs. Agave syrup changes everything.

 

Bring 200ml of water to the boil with 300g of raw agave nectar, stirring until fully dissolved. Remove from heat and add the zest of one lime. Leave to cool, strain and bottle in a sterilised 200ml to 250ml bottle. It keeps for four weeks in the fridge and can be used in any cocktail in place of standard simple syrup, with noticeably better results.

Batched Margarita: Ready When You Are

A batched Margarita made in advance is better than one made to order. The ingredients come together, the flavours round out and when the moment arrives you pour over ice without a second thought.

 

For 6 people: 300ml jalapeño and lime infused tequila, 100ml triple sec, 150ml fresh lime juice, 80ml homemade agave syrup, 150ml filtered water to compensate for dilution. Mix everything together, taste and adjust the balance between sweet and sour to your preference. Bottle and refrigerate.

 

When ready to serve, shake well, pour over plenty of ice and add a salt rim to the glass. A fresh lime slice completes the picture.

Beyond the Margarita: What to Do with Infused Tequila

Once you have a bottle of jalapeño infused tequila in the fridge, the possibilities go well beyond the Margarita. Use it in a Tequila Sunrise in place of regular tequila for a version with real character. Try it as the base for a Paloma, with fresh grapefruit juice and sparkling water: the spicy note pairs surprisingly well with the bitterness of citrus. Or pour a dash over a slice of cold watermelon with sea salt and lime for a summer appetiser that does not even need a glass.

 

Infused tequila is not just a cocktail ingredient: it is a product that lends itself to gifting, to presenting at a dinner table or to bringing to a gathering the way you would bring a bottle of wine, with the difference that something personal went into making it.
