They are different products and both are worth making, but they serve different purposes.
Passata is raw or lightly cooked tomatoes, blended and strained until smooth. The flavour is clean, fresh and intensely tomato. It is the most versatile thing you can bottle: use it as the base for any pasta sauce, pizza, soup or stew. Because it is so simple, the quality of the tomatoes is everything. Peak-season fruit only.
Tomato sauce is cooked down with aromatics, olive oil, garlic, basil or whatever combination you prefer. It is a finished product: open the bottle, heat and serve. It takes longer to make but requires less preparation at dinner time.
Both are bottled using the same method and the same bottles. The difference is in what goes in, not in how it is sealed.
