Jalapeño infused tequila is perhaps the most popular infusion in the world of craft cocktails. Spicy enough to make an impression, with a citrus note that makes it incredibly versatile. This version adds honey and lime to soften the heat and add depth.
Into a clean, sterilised 700ml bottle place 2 fresh jalapeños sliced into rounds (seeds in for more heat, seeds out for something more delicate), the zest of 2 unwaxed limes and a tablespoon of clear honey. Pour in 700ml of good quality tequila blanco, seal and shake. Leave to infuse at room temperature for 24 to 48 hours, tasting every 12 hours: jalapeño works fast and can become too intense if left too long. Strain, rebottle and store in the fridge.
It works perfectly in a spicy Margarita, with tonic water and plenty of ice, or simply served cold in a glass with a salted rim.
